How much should we rotate? Just a little? Or almost onto the back?

The most common mistakes look like this:

no rotation when not breathing, and excessive rotation when taking a breath.

Ideally, body rotation should remain consistent during both breathing and non-breathing strokes, with body roll reaching a maximum of 90°, even when taking a breath — so we should never end up rolling all the way onto our back.
